Grapes sourced from the “El Pinche” estate, planted at an altitude of 415 meters on a south-facing hillside with a slight westward orientation, protected by the Sierra de Codés. The uniqueness of the terroir gives the wine its elegant character.
PRODUCTION AND AGING
The harvesting process prioritizes fruit care and environmental respect, with meticulous selection in the vineyard and low yields of 5,000 kg/ha. Gentle yet firm destemming ensures the grapes remain intact, preserving their organoleptic qualities. Alcoholic fermentation takes place in temperature-controlled tanks from the moment of reception, lasting 9 days, with pump-overs and punch-downs adapted to the fermentation process. Post-fermentative maceration lasts for 7 days.
Minimal-intervention winemaking is applied during stabilization and aging. The wine undergoes racking and is aged in barrels for 11 months. A total of 18 new barrels from 7 different cooperages, using up to 9 types of wood origins and toasting levels, were used in its maturation.
COLOR
Deep, intense, and slightly dusty appearance. Rich red tones with subtle purple hues reminiscent of grape skins.
AROMAS
On the nose, it offers an intriguing and evolving profile in the glass. At its peak expression, notes of dried fruits, spices, and anise dominate.
PALATE
The entry reveals ripe black fruits, followed by toasty notes. As the wine develops in the mouth, it surprises with its depth and complexity, transitioning from soft tannins to a fresh, lingering finish, passing through balsamic and leather nuances. A silky, approachable, and long-lasting wine.
